Vegan Chocolate Chip Banana Bread with coconut flakes and pecans

I love banana bread. No, it is more like: I L.O.V.E. banana bread 🙂 I like trying different recipes and variations and have found a few vegan recipes that I love and make once in a while. I got so excited when I learned that the Food Allergy Freedom Collection of 9 recipes and meal plans eBooks was coming up! As you can tell, I got it right away! And here is the first recipe (selected by Alan) from one of the books. The Chocolate Chip Coconut Banana Bread with coconut flakes and pecans by The Pretty Bee!

Chocolate Chip Banana Bread

As you probably know, I don’t always follow the recipe and this recipe is no exception.

I have omitted the oil (not intentionally, just forgot to add it :)), replaced 3/4 of white flour with the whole wheat flour, increased the quantity of the baking soda as I had no baking powder, and had 3 bananas instead of 2. Well, I love bananas (was I a monkey in the previous life :))

The recipe is calling for 2 mini loafs. However, I was not sure if the cardboard loaf pans I had were the same size, so I made it into 3. Well… don’t do that. Two loafs would have made the nicer-shaped loafs 😉

The banana bread turned awesome (Alan approved :)). However, next time I would reduce the amount of sugar as it was too sweet to me. Also, my hubby asked me to add more pecans next time, so if you like pecans, go ahead and increase the amount 😉

Well… an hour later, there was no banana bread left 🙂 I think I have only had 2 small pieces. Lol.

Ingredients
  • 3 ripe medium-size bananas
  • 1/2 cup organic coconut sugar
  • 1/2 cup organic cane sugar
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 3/8 cup water
  • 1 cup unbleached flour
  • 3/4 cup whole wheat flour (you can use white flour)
  • 1 tsp baking soda (or 1/2 baking soda + 1/2 baking powder
  • 1/2 tsp salt
  • 3/4 cup chocolate chips
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup chopped pecans
Instructions
  1. Preheat oven to 350F (180C). 

  2. Mash bananas in a large mixing bowl. Add sugar, vanilla, water, and vinegar and mix.

  3. Add the flour, baking soda, and salt and mix. Fold in the coconut flakes, chocolate chips, and pecans.

  4. Distribute the dough into two mini loaf pans and bake for 30-40 minutes.

The second round of the everbearing strawberries i The second round of the everbearing strawberries is coming 😍 We’ve had a couple of very warm weeks and just a few rains, and the berries are bigger and sweeter now.

We grow a few kinds of strawberries in the garden, but still don’t get to make jam out of them, as we eat them all fresh 😊

It was a very rainy June and the first week of Jul It was a very rainy June and the first week of July but the warmer days are finally here!

We lost some tomato plants to blight as it was too wet for them. But the rest of them have finally picked up and are happily producing now!

Are you attracted to chartreuse plants as much as Are you attracted to chartreuse plants as much as I am? Honestly, they are like magnet to my eyes and I have to stop and enjoy their bright colour!

We got this euphorbia as a tiny plant 2 years ago from our gardening friend @val_171268 and it since then has grown into a stunning plant with the huge balls of chartreuse flowers!
