Vegan Red Beans Burger with Potato Patties

You know I love simple dishes that don’t take hours to make. However, once in a while we do like making “unusual” meals just to keep it interesting 😉 This is one of those “not-quick” but totally worthy dishes. The vegan red beans burger with potato patties instead of a bun. Wanna check it out?

I am not sure if it was the knowledge of how many calories it is packed with or what. But, to add to my weirdness, I also don’t like fries. Not that I would never eat them. If I am extremely hungry and that is the only option, of course, I will. But that is it 🙂

So you may ask,

How would someone who doesn’t even like burgers share a burger recipe?

Well, this is how.

First, as you have probably guessed, I am weird. Lol. Second, I like trying new (to me) things. Not that we haven’t made them before. But we haven’t shared them before, and probably because this recipe is worth sharing 🙂 And lastly because it is a vegan burger. Isn’t it enough reasons for you 🙂

So here it is.

Vegan Red Beans Veggie Burger with Potato Patties

Pre-soak red (kidney) beans for 4-5 hours or overnight. You can also use canned beans to simplify, we just prefer to cook from scratch. Wash them and cook until soft but not mushy.

Cook peeled potatoes. Use a few for the burger and keep the rest for the patties.

Separate mushroom stems from caps. Fry the stems with onions for 3-5 minutes. We will use these for ground-beans-“meat”. Slice the caps and fry them with onions for 4-5 minutes. These will be our burger “decoration” or layer.

Add beans, fried mushrooms (the stems), a few cooked potatoes, walnuts, spices, and homemade croutons’ crumbs (optional) to the food processor and mix.

Form the burgers and place them into the fridge for 20-30 minutes

Turn the grill on. Grease an aluminium foil with vegetable oil a bit and place it on the grill. Grill the burgers for 1-2 minutes on each side. Alternatively, you can also fry them in the frying pan with a bit of oil.

Burgers might be a bit hard to remove from the grill when hot, as they are soft. If you let them cool for a couple of minutes, they should be removed easily.

Potato Patties

Mash potatoes with a bit of salt and black pepper. You can either form the patties and fry them a bit in the frying pan or use them as is. We did both ways and they were good. So for the sake of less frying (and saving time, and reducing oil calories), you can just use them as is.

Now to the fun part

Layer the potato patties with the burgers. Add condiments of your choice and the fried mushrooms leftovers. We steamed swiss chard and added it between the layers.

And serve.

I can tell you, this vegan red beans burger with potato patties was good 🙂

You can definitely add cilantro or parsley to the beans/veggie mix if you desire. We just did not have fresh cilantro at home, but I am sure it will add a beautiful note to the meal!

Ingredients
  • 1 cup dry red beans (makes about 2 cups cooked beans)
  • 3 large potatoes (or 5-6 small ones) for burgers and patties
  • 6-7 mushrooms
  • 1-2 onions for burgers and fried mushrooms
  • 1/4 cup walnuts
  • 1 tsp ground cumin and coriander mix
  • salt-pepper to taste
Instructions

We lost some tomato plants to blight as it was too wet for them. But the rest of them have finally picked up and are happily producing now!
