Vegan Spring Vegetable Salad with Radishes and Apple

If it is not your first time on our blog, you probably know we are huge fans of easy recipes. Besides the blog, my hubby and I work full-time and have kids’ activities to attend, and we want to have a life 🙂 We don’t usually spend tons of time in the kitchen but we like eating home. This vegan spring vegetable salad with radishes and an apple is very similar to this one, as it is also perfect for spring season. And it literally takes 15 minutes to make it!

And as you know, in spring our bodies have depleted many resources saved from good and healthy summer eating. (you are trying to eat healthy if you ended up on this page, right ;)) Now it is time to take a good care of our bodies and treat ourselves to some fresh veggies and herbs!

It cannot be simpler than that: any vegetables in season will work perfectly!

What does that mean?

It means that if you grow veggies in your garden, you can just go out and get what you have there. If you don’t have a garden or live in a colder climate with late springs and summers, you can just get the seasonal veggies in the store.

And!

Because they are in season, they will be less expensive than non-season veggies and fruit 😉

By the way, did you know you could grow microgreens in any climate zone, with as little space, and that they are times more nutritious than their mature counterparts? 😉

So, what are our spring vegetables?

Radishes, green onions, daikon, herbs (grown on the windowsill), and microgreens.

We have added an apple to the salad, as first, it is pretty easy to save and store them in winter. Second, even after months of storage, they still have a lot of nutritional value in them. And third, the apple tastes awesome in this salad!

We want to eat healthy AND delectable as well!

Radishes and Apples Salad - Appetizing Spring Goodness

Ingredients

  • 1 cup sliced radishes
  • 1/2 cup sliced daikon
  • 2-3 green onions
  • 1-2 stalks celery
  • 1 apple
  • 1 cup herbs and microgreens
  • 1 tbsp vegan mayo
  • salt and pepper to taste

Instructions

  • Cut the vegetables, an apple, and herbs, add vegan "mayo", salt-pepper, and mix. 
    All done!
    Enjoy!

If you make vegan mayo at home, of course, it would be ideal to use it. We don’t always have it on hand, so we just used the vegan mayo from a store. You can add garlic chives to add the pungent flavour and make it even better 😉
