Are you wondering what I am doing here with a mushroom salad when the rest of the country is eating pumpkins and sipping the pumpkin latte? Well, I was going to make a pumpkin dish as well…ย But… Changed my mind and decided to bake a squash. Technically, they belong to the same family, so I thought it would be totally fine ๐ However, by the time almost everything was served, the squash just did not want to get cooked… So, we decided to make a quick switch to the warm mushroom salad instead ๐
Oh, you still don’t see a connection between a pumpkin/squash and mushrooms?
Me either. But we had fresh mushrooms in the fridge, and we had fresh greens from the garden. So, at that moment it was just a perfect quick meal that we could easily make in a blink of an eye. And, since we are all in a hurry to get ready for the Thanksgiving Day in Canada, here is the recipe!
Warm Mushroom Salad with Pine Nuts and Greens
This salad was inspired by a warm mushroom salad I ate many years ago in a restaurant in Tel-Aviv. It was sooo good! We use White Button Mushrooms, but you can use any mushrooms you like. Pine nuts, on the other hand, are a very important ingredient!
Seriously!
The salad won’t be the same without them.
Of course, if you have an allergy to any kinds of nuts, please do not use them ๐
So, we start with the pine nuts. Heat a frying pan and roast pine nuts in for a minute. They burn easily so do not overdo them ๐
Remove nuts. Add a little bit of vegetable oil to the frying pan and add the onions.
ย On the medium-high heat fry the onions for a minute. Add mushrooms and fry for another minute or two. Pour a bit of soy sauce and add spices.
Add the greens and remove from heat.
We have also added a few carrot tops. Did you know they are edible too?
In a bowl,ย mix the mushrooms and greens with pine nuts.
This is it.
The salad is ready!
Isn’t it cool? Well, technically it is warm, but you know what I mean ๐
2-3 minutes of washing and cutting the onions, mushrooms and greens, and greens; and 4-5 minutes of cooking. It is called a salad but can be a great side dish or the main meal.ย Please let me know in the comments if you

Warm Mushroom Salad with Pine Nuts and Greens - Vegan
Ingredients
- 1 small onion
- 1/2 lbs mushrooms (~200-250g)
- 1/4 cup pine nuts
- 1 tbsp vegetable oil
- 1 cup greens (kale, swiss chard, oregano)
- 1/2 tsp ground cumin
- 2 tbsp soy sauce
Instructions
- Roast pine nuts for a minute.
- In a frying pan add vegetable oil and fry onions on medium-high heat for a minute. Add mushrooms, soy sauce, cumin and fry for 2-3 minutes stirring often.
- Add greens and remove from heat. Enjoy!
