Warm Mushroom Salad with Pine Nuts and Greens - Vegan
Ingredients
  • 1 small onion
  • 1/2 lbs mushrooms (~200-250g)
  • 1/4 cup pine nuts
  • 1 tbsp vegetable oil
  • 1 cup greens (kale, swiss chard, oregano)
  • 1/2 tsp ground cumin
  • 2 tbsp soy sauce
Instructions
  1. Roast pine nuts for a minute. 

  2. In a frying pan add vegetable oil and fry onions on medium-high heat for a minute. Add mushrooms, soy sauce, cumin and fry for 2-3 minutes stirring often.

  3. Add greens and remove from heat.
