Tabbouleh Salad - a Mediterranean refreshing meal with bulgur, cucumbers, tomatoes, and herbs.
In a large bowl mix bulgur and water and let it stand until all water is absorbed (approx. 10 min)
In the meantime whisk lemon juice with olive oil, salt, and pepper.
Add the veggies, herbs, and the oil mix to bulgur and mix.
Serve right away or keep in a fridge for up to 2 days.
